Encoding not defaulting to utf-8 anymore

Description

I have for a while consumed data via a REST-api to make tables. It have till now been able to render utf-8 characters correctly, however, it have stopped being able to do that without manually specifying `File encoding` as `utf-8`.

I'm not sure if this is intentional or not, but regarding consuming JSON-data, the spec state that it should be utf-8 as default. See https://www.ietf.org/rfc/rfc4627.txt and http://lucumr.pocoo.org/2013/7/19/application-mimetypes-and-encodings/.

It is not common to set encoding on rest-frameworks, example here for django-rest-framework.

Can you shed some light on the problem, document the bahavior of the plugin, or set the default..?
